Met koriander en pinda's

In de Indonesische keuken wordt veel gebruikgemaakt van kruidenpasta's, ook wel boemboe's genoemd. Traditioneel worden de ingrediënten - kruiden en specerijen maar bijvoorbeeld ook knoflook, ui en citroengras - in een vijzel fijngewreven. Zo'n pasta is de perfecte manier om tijd te besparen, zonder smaak in te leveren.

Cooking Steps

Voorbereiden

• Bereid de bouillon. • Snijd de rode peper fijn en pers of snijd de knoflook fijn.

Roerbakken

• Verhit de zonnebloemolie in een soeppan op hoog vuur. • Fruit de rode peper en de knoflook 1 minuut. • Voeg de groentemix toe en roerbak 3 minuten. • Roer de currypasta door de groenten en roerbak nog 1 minuut

Soep koken

• Voeg de kokosmelk en de bouillon toe aan de pan en laat op middelmatig vuur 5 – 7 minuten zachtjes koken. • Snijd ondertussen de koriander fijn en hak de pinda's grof. • Voeg de in laatste 3 minuten de udon noedels aan de soep toe.

• Serveer de soep in kommen. Garneer met de koriander en de pinda's.
