Voorbereiden

Verwarm de oven voor op 180 graden. Bereid de bouillon. Verhit 1/2 el roomboter per persoon in een soeppan met deksel op middelhoog vuur. Voeg de ui-wortelmix, de ui-knoflookmix en de voorgekookte krieltjes toe. Bak 3 - 4 minuten.

Tip: Wortel zit boordevol vitamine A - goed voor de groei, de gezondheid van je huid, haar en nagels en een goede werking van je ogen en afweersysteem.

Soep koken

Snijd de varkensrookworst in plakken en de tomaat in blokjes. Blus de groenten in de soeppan af met de bouillon en voeg vervolgens de rookworst en de tomaat toe. Breng aan de kook en laat 5 minuten doorkoken. Snijd het bruine broodje in plakken, verdeel over een bakplaat met bakpapier en bestrooi met en de belegen kaas.

Tip: Besmeer de plakken brood eventueel eerst met een laagje mosterd.

Soep afwerken

Gratineer de plakjes brood met kaas 4 - 5 minuten in de oven. Stamp de soep grof met een aardappelstamper. Voeg 1 el mosterd per persoon toe aan de soep en verhit nog 3 minuten. Snijd de bladpeterselie grof.

Serveren

Proef de soep en breng indien nodig op smaak met peper en zout. Verdeel de soep over soepkommen en garneer met de bladpeterselie. Serveer de gegratineerde plakjes brood erbij.
