Verwarm de oven voor op 200 graden. Laat de cannellinibonen uitlekken in een vergiet. Snijd de limoen in partjes.Pers de knoflook of snijd fijn. Snijd de bosui in fijne ringen. Bewaar het groene en witte gedeelte apart. Verhit de Mexicaanse kruiden 1 minuut in een hapjespan met deksel op middelhoog vuur.Voeg 1/2 el olijfolie per persoon toe aan de hapjespan en bak het witte gedeelte van de bosui, de knoflook en de cannellinibonen 2 - 3 minuten.

Voeg de tomatenblokjes toe en pers 1 partje limoen per persoon uit boven de pan. Roer goed en laat 3 - 4 minuten indikken. Maak voor elk ei een kuiltje in het groentemengsel en breek de eieren hierin. Bestrooi de eieren met peper en zout. Dek de pan af en laat de eieren 6 - 8 minuten stollen. Verwijder het deksel na 4 minuten en verdeel de geraspte cheddar eroverheen.

Tip: Het ei is gaar als het eiwit stolt, maar de dooier nog zacht is. Gaar langer door als je van een harde dooier houdt.

Verpak de tortilla's in aluminiumfolie en verwarm 2 - 3 minuten in de oven. Snijd het vruchtvlees van de avocado in blokjes.

Tip: Halveer de avocado in de lengte. Draai de helften van elkaar en haal de pit eruit. Snijd het vruchtvlees in blokjes en haal de blokjes er met een lepel uit.

Zet de eieren, mini-tortilla's, avocado, zure room, het groene deel van de bosui en de overige limoen op tafel zodat iedereen zelf zijn eigen tortilla kan vullen. Schep eerst de eieren met saus in de mini-tortilla's, verdeel de avocado en zure room eroverheen en garneer met de bosui. Serveer met de overige limoen.
