Voorbereiden

Breng ruim water aan de kook in een pan met deksel voor de rijst. Pers de knoflook of snijd fijn. Rasp de gember met een fijne rasp of schil en snijd fijn. Snipper de ui. Halveer de courgette in de lengte en snijd in halve maantjes.

Bakken

Kook de rijst 10 - 12 minuten. Giet af en laat uitstomen zonder deksel. Verhit 1/2 el zonnebloemolie per persoon in een wok of hapjespan op middelhoog vuur. Voeg per persoon1 tl vadouvan en 1/2 tl gemalen citroengras toe en bak 1 minuut. Voeg de gember, knoflook, de gesnipperde ui en courgette toe en roerbak 1 - 2 minuten.

Curry afmaken

Blus af met 1/2 el wittewijnazijn per persoon, de kokosmelk en de zoete Aziatische saus. Verlaag het vuur, meng goed door en laat 5 - 6 minuten zachtjes koken. Snijd de tomaat in blokjes, de koriander fijn en de limoen in parten. Voeg de garnalen en de helft van de tomaat toe aan de curry en verwarm 3 - 4 minuten. Breng op smaak met peper en zout.

Serveren

Verdeel de rijst over de borden en schep de vadouvan-curry erbovenop. Garneer met de koriander, de overige tomaat en de partjes limoen.
