Cooking Steps

Pompoen bereiden

Verwarm de oven voor op 200 graden. Verhit de roomboter in een steelpan met deksel op middelhoog vuur en bak de pompoenblokjes 5 minuten. Voeg de room toe en kook 7 – 10 minuten op laag vuur. Roer af en toe door. Breng op smaak met peper en zout.

Snijd ondertussen de rode ui in dunne halve ringen. Verbrokkel de feta.

Voeg de pompoen met room toe aan een hoge kom en pureer met een staafmixer tot een dikke saus. Leg de flammkuchen op een bakplaat met bakpapier en besmeer met de pompoen-roomsaus. Bestrooi met de tijm.

Verdeel de rode ui en de feta over de flammkuchen en breng op smaak met peper en zout. Bak de flammkuchen 10 minuten in de oven, of tot het deeg mooi krokant is.

Pompoenpitten roosteren

Verhit ondertussen een koekenpan, zonder bakvet, op middelhoog vuur. Rooster de pompoenpitten tot ze beginnen te poffen. Meng in een saladekom de zwarte balsamicoazijn met de extra vierge olijfolie en breng op smaak met peper en zout. Schep de rucola erdoor.
