Cooking Steps

Voorbereiden

  • Bereid een bouillon van per persoon: 200 ml water met 1/4 kippenbouillonblokje.
  • Was of schil de aardappelen en snijd in partjes. Spoel af met koud water.
  • Snipper de sjalot en snijd de wortel in dunne halve maantjes.

Weetje: Wist je dat aardappelen supergezond zijn? Ze zijn rijk aan goede koolhydraten, kalium, vitamine C, B6 en B11 en vezels!

Soep maken

  • Verhit 1 el zonnebloemolie per persoon in een soeppan of grote pan met deksel op middelhoog vuur en fruit de sjalot 1 minuut.
  • Voeg de kip, currykruiden, aardappelpartjes en wortel toe en bak 3 minuten.
  • Voeg de kokosmelk en bouillon toe. Kneus het citroengras en voeg toe (zie Tip).
  • Verlaag het vuur en laat, afgedekt, 9 - 12 minuten zachtjes pruttelen.

Tip: Hoe meer je de citroengrasstengel breekt hoe meer smaak hij afgeeft.

Soep afmaken

  • Verwijder de steelaanzet van de paksoi en snijd zowel de stelen als het blad van de paksoi klein.
  • Voeg de paksoi toe en laat nog 3 minuten pruttelen.
  • Voeg de vissaus en Vietnamese saus toe aan de soep en roer goed door (zie Tip 1 en 2).
  • Controleer of de aardappelen en wortel gaar zijn. Breng eventueel op smaak met peper en zout of een scheutje vissaus.

Tip 1: Vissaus kan erg overheersend zijn, voeg daarom niet teveel toe en proef de soep voordat je meer toevoegt.

Tip 2: Let jij op je zoutinname? Laat de vissaus dan achterwege en voeg eventueel na het serveren naar smaak een beetje toe.
