Cooking Steps

Prepare

  • Preheat the oven to 200°C.
  • Finely chop the onion.
  • Quarter the carrot lengthways and then thinly slice.
  • Heat a drizzle of sunflower oil in a deep frying pan over medium-high heat. Fry the carrot and onion for 6 - 8 minutes, covered.

Make the sauce

  • Cut half of the lime into wedges and juice the rest.
  • Finely chop the parsley and dice the tomato.
  • In a small bowl, combine the mayonnaise with the sugar, along with (per person) 0.5 tbsp water and 1 tsp lime juice.
  • Season to taste with salt and pepper.
Make the filling

  • Stir the black beans and smoked paprika into the vegetables, then mash to combine.
  • Stir in the plant-based mince and the passata and fry for 2 - 3 more minutes, then season to taste with salt and pepper.
  • In a small bowl, combine (per person) 1 tbsp water and 0.5 tbsp sunflower oil.
  • Spread this over the tortillas and then place wet-side down on a parchment-lined baking sheet.
Serve

  • Spread the topping over the tortillas and press down with a spoon, then bake in the oven for 5 minutes.
  • Serve all of the elements separately at the table; the lettuce, tomato, parsley, sauce and lime wedges. 
  • Allow everyone to build their own tostadas as preferred.
