Cooking Steps

Aardappelen koken
1

Breng ruim water aan de kook in een pan met deksel. Was of schil de aardappelen en snijd in grove stukken. Voeg de aardappelen toe en kook, afgedekt, in 12 - 15 minuten gaar. Giet af en laat uitstomen zonder deksel. Breng op smaak met peper en zout.

Voorbereiden

Bereid 125 ml bouillon per persoon. Pers de knoflook of snijd fijn. Snijd de krulpeterselie en de bieslook fijn. Snijd de steel van de broccoli in blokjes en de bloem in roosjes.

Broccoli bereiden

Verhit 1 el roomboter per persoon in een hapjespan met deksel op hoog vuur. Bak de knoflook, verse kruiden en broccoli 1 - 2 minuten. Blus af met de bouillon, zet het vuur lager en laat de broccoli, afgedekt, 8 - 10 minuten stoven. Giet indien nodig af. Breng op smaak met peper en zout.

Tip: Wist je dat broccoli rijk is aan ijzer en kalium? Dit gerecht bevat ongeveer 200 gram broccoli per portie en bevat daardoor meer vitamine C dan de aanbevolen dagelijkse hoeveelheid.

Varkensfilet klaarmaken

Omwikkel de varkensfilet met het ontbijtspek. Verhit de olijfolie in een koekenpan op middelhoog vuur en bak de filet 1 - 3 minuten per kant. Haal uit de pan en bewaar onder aluminiumfolie tot serveren. Snipper ondertussen de sjalot fijn. Verhit de koekenpan opnieuw en fruit de sjalot 2 minuten op middelmatig vuur.

Jus maken

Schenk een scheutje water en 1/2 el mosterd per persoon bij de sjalot in de koekenpan en breng aan de kook. Roer glad tot er een egale jus ontstaat. Breng op smaak met peper en zout.

Serveren

Verdeel de gekookte aardappelen over de borden en schenk de jus erover. Leg de varkensfilet met ontbijtspek ernaast en serveer met de broccoli.
