Cooking Steps

Voorbereiden

Breng 250 ml water per persoon aan de kook in een pan met deksel en kook de rijst, afgedekt, in 10 - 12 minuten gaar. Laat, afgedekt, 5 minuten nagaren. Rasp linten van de komkommer met een dunschiller of kaasschaaf en meng in een kom met 1 tl wittewijnazijn per persoon, peper en zout. Pers de knoflook of snijd fijn. Meng in een kleine kom per persoon: 1/4 tl sambal, 1 el water, 1 tl wittewijnazijn, 1 tl bruine suiker, de helft van de gomasio en de helft van de knoflook. Bewaar de sambal-gomasiosaus tot serveren.

Snijden en bakken

Snijd de champignons in kwarten. Verhit 1/2 el zonnebloemolie per persoon in een koekenpan op middelhoog vuur en bak de champignons 5 - 7 minuten. Breng op smaak met peper en zout, haal uit de pan en zet opzij tot stap 4. Breng ruim water aan de kook in een waterkoker. Schenk het kokende water over de spinazie in een vergiet en laat uitlekken.

Varkenshaas bakken

Verhit 1 el zonnebloemolie per persoon in een andere koekenpan op hoog vuur. Bak de varkenshaasreepjes en de overige knoflook 2 - 4 minuten. Verhit 1/4 el zonnebloemolie per persoon in dezelfde koekenpan van de champignons op middelmatig vuur en bak 1 spiegelei per persoon. Breng op smaak met peper en zout. Voeg 1 tl Koreaanse kruiden per persoon toe aan de rijst.

Tip: Ei is een van de weinige ingrediënten bomvol vitamine D. Deze vitamine krijgen we gemiddeld te weinig binnen, terwijl we het hard nodig hebben voor de opname van calcium.

Serveren

Schep de rijst in een kom en verdeel er de varkenshaasreepjes, komkommer, spinazie en champignons over. Leg het spiegelei erbovenop. Garneer met de overige gomasio. Besprenkel met de sambal-gomasiosaus en sojasaus, of serveer de sauzen apart.
