• Verhit 1 el zonnebloemolie per persoon in een wok op hoog vuur en roerbak de groentemix 6 - 7 minuten met peper en zout. Pers ondertussen het sap van de limoen uit. • Verhit een koekenpan met 1 tl olijfolie per tortilla en leg één tortilla in de pan. Verdeel er de gewokte groenten over en bestrooi met de geraspte cheddar.

• Bedek de pan met een deksel totdat de kaas is gesmolten. Bedek de bovenkant van de quesadilla met een andere tortilla en draai voorzichtig om. • Bak de andere kant nu krokant en goudbruin in 3 – 4 minuten op middelmatig vuur. Herhaal deze stap voor alle tortilla's of bak met meerdere pannen tegelijk.

• Meng in een kleine kom de mayonaise met 3/4 tl van het limoensap per persoon en een snufje gerookt paprikapoeder. • Meng in een saladekom de extra vierge olijfolie, de zwarte balsamicoazijn, peper en zout tot een dressing. Voeg de gemengde sla toe en schep goed om.

• Snijd de quesadilla in puntjes en verdeel over de borden. Serveer met de salade en de limoenmayonaise om te dippen.
