Verwarm de oven voor op 200 graden. Snijd de prei in dunne ringen. Snijd de champignons in kwarten. Ris de blaadjes tijm van de takjes.

Tip: Wist je dat deze maaltijd meer dan 250 gram groenten bevat? Dat maakt iedere portie rijk aan onder andere vitamine B en C, kalium en magnesium!

Verhit ondertussen 1/2 el olijfolie per persoon in een hapjespan met deksel op middelhoog vuur. Stoof de prei, champignons en tijm met 1 el water per persoon, afgedekt, 6 - 8 minuten. Breng op smaak met peper en zout.

Meng intussen de helft van de ricotta en de helft van de emmentaler in een kom. Breng op smaak met peper en zout. Leg het quichedeeg op een bakplaat met bakpapier. Verspreid het ricottamengsel over het quichedeeg tot 4 cm van de rand.

Tip: Deze maaltijd is calorierijk. Let jij op je calorie-inname? Gebruik dan 1/3 van het quichedeeg per persoon. De rest kun je de volgende dag vullen en bakken met je favoriete ingrediënten voor een lekkere snack.

Verdeel de groenten over het ricottamengsel en vouw de randen naar binnen. Bak de plaattaart 30 - 35 minuten in de oven tot de bodem gaar is en de randjes goudbruin. Verdeel na 20 minuten bakken de overige kaas en ricotta over de plaattaart.

Tip: Versier de plaattaart door de overige ricotta in sierlijke toefjes tussen de groenten te verdelen.

Snijd de tomaat in blokjes. Meng in een saladekom per persoon: 1tl witte balsamicoazijn met 1 tl extra vierge olijfolie. Meng de tomatenblokjes erdoor en breng op smaak met peper en zout. Voeg net voor serveren de gemengde sla toe.
