Cooking Steps

Voorbereiden

  • Verwarm de oven voor op 200 graden (zie Tip).
  • Snijd de kipfilet in gelijke stukken van 3 cm. Meng in een kom met 1/3 van de yoghurt. Bewaar apart tot gebruik.
  • Snipper de helft van de ui fijn en snijd de andere helft in halve ringen. Pers de knoflook of snijd fijn.
  • Snijd de courgette in staafjes van ongeveer 4 cm lang.

Tip: In deze stap verwarm je de oven voor om later de tortilla's in te verwarmen, maar je kunt er ook voor kiezen om dit straks in een pan te doen.

Rijst koken

  • Verhit 1/2 el roomboter per persoon in een pan met deksel op middelhoog vuur. Voeg de knoflook, de gesnipperde ui en 1/2 tl Mexicaanse kruiden (let op: pittig! Gebruik naar smaak) per persoon toe en bak 1 - 2 minuten.
  • Voeg de basmatirijst en 180 ml water per persoon toe.
  • Verkruimel ¼ groentebouillonblokje per persoon boven de pan en breng aan de kook. Zet dan het vuur lager en kook de rijst, afgedekt, 10 minuten (zie Tip).
  • Haal vervolgens de pan van het vuur en laat staan tot serveren.

Tip: Deze maaltijd is calorierijk. Let jij op je calorie- of koolhydraatinname? Kook dan alle rijst maar gebruik 2/3. De overige rijst kun je de volgende dag in een lunchsalade verwerken.

Kip bakken

  • Verhit 1/2 el olijfolie per persoon in een koekenpan. Bak de courgette, de halve uienringen en 1 tl Mexicaanse kruiden per persoon 4 - 6 minuten.
  • Voeg ondertussen de panko toe aan een diep bord. Haal de kip door de panko en zorg dat hij rondom helemaal bedekt is.
  • Verhit 3 el zonnebloemolie per persoon in een andere koekenpan op hoog vuur (zie Tip). Zorg dat de olie goed heet is en bak de kip 2 – 3 minuten per kant, of tot het korstje goudbruin kleurt.
  • Laat uitlekken op een bord met keukenpapier.

Tip: Je gebruikt vrij veel olie omdat je de kip eigenlijk frituurt. Hierdoor wordt hij lekker knapperig.

Serveren

  • Verpak de tortilla's in aluminiumfolie en verwarm 3 - 4 minuten in de oven.
  • Verdeel de rijst, tortilla's, gegrilde groenten en krokante kip over de borden.
  • Serveer de geroosterde-paprikasaus en de overige yoghurt in aparte kommetjes.

Weetje: Wist je dat er in deze geroosterde paprikasaus heel veel paprika's zijn verwerkt? Zo krijg je zonder dat je het door hebt nog meer groenten binnen.
