- Preheat the oven to 220°C.
- Transfer the baby potatoes to a parchment-lined baking sheet and drizzle with olive oil. Season with salt and pepper, then toss well to coat.
- Roast in the oven for 15 - 20 minutes, tossing halfway.
- Melt a knob of butter in a frying pan or gill pan over medium-high heat. Cut open the brioche bun and toast face-down for 3 - 5 minutes, or until lightly browned. Remove from the pan and set aside.
- Melt a knob of butter in the same pan over medium-high heat and fry the burger for 5 minutes.
- Slice the onion into half rings, then add it to the pan. Flip the burger and fry for 3 - 4 more minutes.
- Cut several slices of mozzarella for the burger, then cut the rest into smaller pieces.
- Top the burger with the sliced mozzarella, then cover with the lid and allow to melt for 1 minute.
- Transfer the Serrano ham to a parchment-lined baking sheet and bake on the top shelf of the oven for 5 minutes.
- Meanwhile, halve the cherry tomatoes.
- In a salad bowl, combine the extra virgin olive oil with the balsamic vinegar. Season to taste with salt and pepper.
- Add the cherry tomatoes, the arugula and the rest of the mozzarella, then toss well to combine with the dressing.
- Halve and pit the avocado, then remove the skin and slice the flesh.
- Spread the brioche with mayonnaise as preferred.
- Top with the avocado and some of the salad, then top with the cheeseburger, Serrano ham and fried onion.
- Serve the burger with the baby potatoes and salad alongside.
