[Plant-based] butter

Balsamic vinegar
1.5 tablespoon

Preheat the oven to 220°C. Slice the onion into half rings and cut the tomato into eighths. Slice the courgette into crescents. Transfer all three to an oven dish along with the Sicilian herbs. Drizzle generously with olive oil and add the balsamic vinegar, then season generously with salt and pepper. Toss well to coat and then roast in the oven for 18 - 20 minutes.

Heat a drizzle of olive oil in a frying pan over medium-high heat and fry the potatoes for 15 minutes until done. Season with plenty of salt and pepper. Bake the bread roll in the oven for 4 - 6 minutes.

Melt a knob of butter in a frying pan over medium-high heat. Flatten the chicken burger using a fork and then fry for 8 - 10 minutes or until done, turning regularly.

Cut open the bread roll and top with the bruschetta spread and the chicken burger. Serve the burger with the potatoes and vegetables alongside.
