Cooking Steps

Voorbereiden

  • Verwarm de oven voor op 200 graden en bereid de bouillon.
  • Was of schil de zoete aardappel en snijd in halve plakken van maximaal 1 cm dik. 
  • Snijd de bloem van de bloemkool in roosjes en de steel in blokjes. 
  • Meng in een grote kom de zoete aardappel en bloemkool met 1 el olijfolie per persoon, de Midden-Oosterse kruiden, peper en zout. Verdeel de groenten over een bakplaat met bakpapier.
Granaatappel bereiden

  • Meng in een ovenschaal de bulgur en de bouillon. Roer goed door en breng op smaak met peper.
  • Dek de ovenschaal af met aluminiumfolie en plaats onderin de oven. Zet de bakplaat met bloemkool en zoete aardappel erboven en bak beide 18 - 20 minuten.
  • Rol de granaatappel al duwend over het aanrecht zodat je de pitjes hoort kraken.
  • Snijd de granaatappel doormidden en haal de granaatappelpitjes uit de schil.
Kruidenolie maken

  • Snijd de verse kruiden fijn.
  • Meng in een kleine kom de helft van de verse kruiden met per persoon: 1/2 el extra vierge olijfolie en 1/2 tl witte balsamicoazijn. Breng op smaak met peper en zout.
  • Voeg de hummus toe aan een andere kleine kom, meng met 1/2 el water per persoon en breng op smaak met peper en zout.
Serveren

  • Verdeel de bulgur over de borden.
  • Schep de zoete aardappel en de bloemkool over de bulgur. 
  • Besprenkel met de hummusdressing.
  • Garneer met de kruidenolie, de granaatappelpitjes en de overige verse kruiden.

Weetje: Bloemkool is rijk aan calcium voor sterke botten en tanden, vitamine C voor de weerstand, kalium voor een gezonde bloeddruk en vezels voor gezonde darmen.
