Voorbereiden

• Breng de bouillon aan de kook in een pan met deksel. • Kook water in een waterkoker of steelpan voor de eieren • Pers of snijd de knoflook fijn en snipper de sjalot. Pers de citroen uit. • Hak de verse kruiden fijn en snijd de paddenstoelen in kwarten.

Koken en bakken

• Kook de bulgur, afgedekt, 8 – 10 minuten in de pan met bouillon. Kook de eieren in 5 – 6 minuten zacht en spoel onder koud water. • Verhit de olijfolie in een koekenpan en fruit de knoflook en sjalot 1 – 2 minuten. Voeg de paddenstoelen toe en bak 5 – 6 minuten op hoog vuur. Breng op smaak met peper en zout.

• Pel de eieren en snijd de citroen in parten. • Roer de bulgur los met een vork. • Meng de bulgur met de verse kruiden en de mascarpone en breng op smaak met peper

Serveren

• Verdeel de bulgur over de borden en schep de paddenstoelen erop en eromheen. • Snijd het ei open en serveer op de bulgur. • Garneer met de pecorino en de partjes citroen zodat ieder naar smaak citroensap kan toevoegen.
