Cooking Steps

  • Verwarm de oven voor op 220 graden.
  • Verwijder 1 – 2 cm van harde onderkant van de groene asperges. Snijd de tomaat in 8 partjes. Verdeel de groene asperges en tomaten over een ovenschaal, besprenkel met per persoon: 1/2 el olijfolie en 1/2 tl tijm en breng op smaak met peper en zout. Rooster vervolgens 18 minuten in de oven.
  • Marineer ondertussen de kipfilet in een diep bord met per persoon: 1/2 el olijfolie en 1 1/2 tl Siciliaanse kruidenmix. Breng op smaak met peper en zout.
Kipfilet bakken

  • Leg de gemarineerde kipfilet in een ovenschaal en zet deze bij de groenten in de oven. Bak de kip 8 - 10 minuten, of tot de kip gaar is.
  • Verhit 1/2 el roomboter per persoon in een koekenpan met deksel op middelhoog vuur.
  • Bak de voorgekookte krieltjes, afgedekt, 5 - 6 minuten.
  • Haal het deksel van de pan en voeg 1/2 tl rozemarijn per persoon toe. Bak, onafgedekt, nog 5 minuten.
Saus verhitten

  • Verhit de hollandaisesaus in een steelpan op laag vuur.
  • Breng op smaak met peper en zout en roer goed door.
  • Voeg de achtergebleven marinade uit de ovenschaal van de kip toe aan de hollandaisesaus.
Serveren

  • Verdeel de krieltjes met rozemarijn over de borden.
  • Leg de asperges en tomaten erbij.
  • Snijd de kipfilet in plakken en leg de plakken schuin over de asperges.
  • Serveer met de hollandaisesaus.
