Breng ruim water aan de kook in een pan met deksel voor de sperziebonen en noedels. Verwijder de steelaanzet van de sperziebonen en snijd de sperziebonen in 3 gelijke stukken. Snijd de bosui in fijne ringen en bewaar het witte en groene gedeelte apart van elkaar. Pers de knoflook of snijd fijn.

Noedels en sperziebonen koken

Kook de sperziebonen in 6 - 8 minuten gaar in de pan met deksel. Voeg in de laatste 3 - 4 minuten de noedels toe en kook mee. Giet daarna af en spoel kort met water.

Tip: In sperziebonen zitten belangrijke mineralen. Zo zorgt kalium voor het behoud van een gezonde bloeddruk en zowel ijzer als foliumzuur voor een energieker gevoel.

Gehaktballetjes bakken

Verhit ondertussen 1/2 el zonnebloemolie per persoon in een hapjespan op middelhoog vuur. Fruit de knoflook en het witte gedeelte van de bosui 1 minuut. Voeg de gehaktballetjes toe en halveer ze met een spatel in de pan. Bak in 3 - 4 minuten goudbruin. Voeg de ketjap en zoete Aziatische saus toe aan de gehaktballetjes. Schep goed om en bak nog 2 - 3 minuten. Voeg op het laatste moment de gomasio toe.

Verdeel de noedels met sperziebonen over diepe borden. Schep de gehaktballetjes met saus eroverheen. Garneer met de taugé en het groene gedeelte van de bosui.
