The taco originated in Mexican silver mines. Originally, it referred to the sheet of paper wrapped around a stick of dynamite. Nowadays, tacos still cause flavour explosions!

- Preheat the oven to 180°C.
- Cut the bell pepper into strips.
- Heat a drizzle of olive oil in a frying pan over medium-high heat.
- Fry the mince with the bell pepper, the Mexican-style spices* and half of the onion for 4 minutes, separating the mince as you do so.
*Take care, this ingredient is spicy! Use as preferred.
- Drain the beans, then add them to the pan and fry for 2 more minutes.
- Meanwhile, transfer the taco shells to a parchment-lined baking sheet.
- Heat in the oven for 5 minutes.
- Dice the tomato.
- In a salad bowl, combine the tomato and white wine vinegar with the rest of the onion. Season to taste with salt and pepper.

- Stuff the taco shells with the filling.
- Garnish with the salsa and the sour cream.
- Drizzle with the sweet chili sauce to finish.
