Citroen-tijmkipfilet uit de oven

Met gebakken krieltjes en snijbonen

De krieltjes kun je ook in de oven bereiden in plaats van in de koekenpan, in de tip in het recept lees je hoe je dit moet doen. De kipfilet bak je aan in de pan en gaar je verder in de oven, zodat hij mooi sappig blijft. Citroen is een sterke smaakmaker, gebruik dus iets minder als je er niet zo heel erg van houdt.

Verwarm de oven voor op 200 graden. Breng een pan met ruim water aan de kook voor de krieltjes. Was de krieltjes en snijd doormidden. Kook de krieltjes in 10 minuten beetgaar in de pan met deksel.

Wrijf ondertussen de kipfilet in met peper en zout. Verhit 3/4 el roomboter per persoon in een koekenpan en bak de kipfilet 3 - 4 minuten per kant op middelhoog vuur bruin. Rasp ondertussen de schil van de citroen en snijd de citroen in plakken. Voeg in de laatste minuut 1/2 tl citroenrasp per persoon toe aan de kip.

Verhit 1 el olijfolie per persoon in een hapjespan met deksel op middelhoog vuur en bak de krieltjes met de gedroogde rozemarijn in 20 – 30 minuten, afgedekt, gaar en goudbruin. Haal na 15 minuten het deksel van de pan. Breng op smaak met peper en zout.

Verdeel ondertussen de plakjes citroen en de takjes tijm over de bodem van een ovenschaal. Haal de kipfilet uit de pan, leg op de citroen en schenk het bakvet erover. Zet de kipfilet in de oven en bak 7 – 14 minuten in de oven, of tot de kipfilet gaar is.

Pers ondertussen de knoflook of snijd fijn. Verhit de overige roomboter in een koekenpan met deksel en fruit de knoflook 1 – 2 minuten op middelhoog vuur. Voeg de snijbonen en 2 el water per persoon toe en bak, afgedekt, 6 minuten. Haal daarna de deksel van de pan en bak nog 4 minuten. Breng op smaak met peper en zout.
