Cooking Steps

Voorbereiden

  • Breng ruim water met een snuf zout aan de kook in een pan met deksel voor de rijst.
  • Kook de rijst, afgedekt, 10 - 12 minuten. Giet daarna af.
  • Snipper ondertussen de ui. Pers de knoflook of snijd fijn.
  • Snijd de wortel in blokjes.
Groenten stoven

  • Verhit 1/2 el roomboter per persoon in een wok of hapjespan met deksel op middelmatig vuur.
  • Fruit de knoflook, ui en 1 1/2 tl Mexicaanse kruiden (let op: pittig! Gebruik naar smaak) per persoon 2 minuten.
  • Voeg de wortel, de kokosmelk en de tomatenblokjes toe (zie Tip).
  • Verkruimel 1/3 bouillonblokje per persoon boven de pan en laat, afgedekt, 10 - 12 minuten zachtjes koken op middellaag vuur.

Tip: Is de kokosmelk (deels) gestold in de verpakking? Geen zorgen: knip het pakje open en roer de melk goed door of laat de gestolde kokosmelk smelten in de hapjespan.

  • Snijd de koriander fijn (zie Tip 1).
  • Dep de koolvis droog met keukenpapier en snijd in blokjes van 3 cm.
  • Voeg, vlak voor serveren en wanneer de stoof zachtjes aan het koken is, de koolvis toe aan de hapjespan en verwarm de vis 2 - 3 minuten in de stoof. Breng eventueel verder op smaak met peper en zout (zie Tip 2).

Tip: De steeltjes van de koriander hebben ook veel smaak. Gooi ze dus niet weg, maar snijd ze extra fijn mee.

Tip 2: Houd je van pittig en heb je sambal in huis? Voeg dit dan naar smaak aan de stoof toe.

  • Verdeel de rijst over diepe borden of kommen.
  • Schep de visstoof over de rijst en garneer met de verse koriander.

Weetje: Wist je dat tomaten uit blik bijna net zoveel vitaminen en mineralen bevatten als verse tomaten? Bij elkaar opgeteld bevat dit gerecht meer dan 300 gram groente!
