Marinade maken
1

Pers de knoflook of snijd fijn. Rasp de gember met een fijne rasp. Maak in een kom een marinade van de teriyakisaus, knoflook, gember, 1/4 el wittewijnazijn per persoon, peper en zout. Voeg de biefstukreepjes toe, roer door en zet apart.

Komkommer zoetzuur maken

Snijd de komkommer in dunne plakken. Meng in een kom per persoon: 1 el wittewijnazijn en 1 tl suiker met een snuf zout. Meng de komkommer erdoor en houd apart. 

Groenten bakken

Breng ruim water aan de kook in een pan met deksel voor de noedels. Snijd de paprika en de wortel in blokjes. Verhit 1/2 el zonnebloemolie per persoon in een wok of hapjespan op middelhoog vuur. Voeg de paprika en wortel toe en bak 6 - 8 minuten. Breng op smaak met peper en zout.

Biefstukreepjes bakken

Verhit 1/2 el zonnebloemolie per persoon in een koekenpan op middelhoog vuur. Wacht tot de pan goed heet is en bak de biefstukreepjes met de teriyaki-marinade in 1 minuut rondom bruin (zie Tip). De biefstukreepjes mogen nog rosé zijn vanbinnen. 

Tip: Bak de biefstukreepjes eventueel langer of korter, afhankelijk van hoe je je biefstuk het liefst eet.

Afmaken

Kook ondertussen de noedels 3 - 4 minuten in de pan met deksel. Giet vervolgens af en voeg de noedels en de zoete Aziatische saus toe aan de pan met groenten. Meng goed door en verwarm het geheel 1 minuut. Besprenkel met extra vierge olijfolie naar smaak.

Verdeel de noedels met de groenten over de borden en leg de biefstukreepjes erop. Serveer de zoetzure komkommer ernaast.
