Cooking Steps

Make the salad

  • Chop the onion into half rings.
  • Slice the cucumber into crescents. 
  • Transfer the watermelon to a serving dish and mix with the cucumber and onion. 
  • Add the extra virgin olive oil and season with black pepper to taste. Mix together. 
Prepare the topping

  • Crumble the feta. 
  • Tear the basil leaves from the stems. 
  • Finely chop half of the leaves and mix through the salad. Use the other half as a garnish. 
Serve

  • Drizzle the crema di balsamico over the salad. 
  • Sprinkle the feta on top and garnish with the basil leaves.
