Cooking Steps

Voorbereiden

  • Verwarm de oven voor op 200 graden.
  • Snijd de ui in brede ringen. Pel de knoflook, maar laat de knoflook heel.
  • Snijd de wortel in stukken van 3 cm. Verwijder de steelaanzet van de sperziebonen.
  • Halveer de krieltjes.
Bakken

  • Meng in een kom de krieltjes, sperziebonen, wortel en ui met 1/2 el olijfolie per persoon, de Midden-Oosterse kruiden, peper en zout. Verspreid over een bakplaat met bakpapier.
  • Bak 30 - 35 minuten in de oven. Schep halverwege om.
  • Bak de knoflook 5 minuten mee in de oven.
  • Verhit 1/2 el olijfolie per persoon in een koekenpan op middelhoog vuur en bak de gehaktballetjes in 5 - 6  minuten rondom bruin. Voeg in de laatste minuut de aangegeven hoeveelheid water toe aan de pan en laat de gehaktballetjes het water opnemen.
Saus maken

  • Meng in een kleine kom de zure room met 1/4 tl sumak per persoon, extra vierge olijfolie, peper en zout.
  • Haal de knoflookteen uit de oven, hak fijn en meng door de saus.
  • Hak de peterselie grof.
Serveren

  • Verdeel de groenten en gehaktballetjes over de borden.
  • Besprenkel met de saus en garneer met de peterselie.
