- Take the steak out of the fridge and allow it to reach room temperature.
- Heat a drizzle of olive oil in a frying pan over medium-high heat and fry the potato rounds for 15 minutes (see Tip).
- Season to taste with salt and pepper.
- Discard the tips of the green beans and then cut in half.
Tip: use an extra pan if you're cooking for more than two people.
- Fill a pot or saucepan with a shallow layer of water, then add the green beans and a pinch of salt.
- Cover with the lid and bring to a boil, then cook for 4 - 6 minutes until al dente. Drain and rinse under cold water.
- Finely chop the lettuce. In a salad bowl, combine the mustard with the honey and the extra virgin olive oil.
- Add the lettuce and the green beans, then toss well to combine. Season to taste with salt and pepper.
- Melt a generous knob of butter in a frying pan over medium-high heat.
- Pat dry the steak with kitchen paper, then season with salt and pepper.
- When the butter is nice and hot, fry the steak for 1 - 3 minutes per side.
- Remove from the pan and season with pepper, then set aside to rest under aluminum foil.
- In the meantime, heat the peppercorn sauce in a saucepan over low heat.
- Slice the steak into strips and serve with the salad and potato rounds alongside.
- Top the steak with the peppercorn sauce.
