Cooking Steps

Prepare

  • Take the steak out of the fridge and allow it to come up to room temperature.
  • Chop the onion into half rings. Slice the courgette into crescents.
  • Slice the mushrooms. 
  • Heat half of the olive oil in a deep frying pan with a lid over medium heat. Fry the onion and courgette for 2 - 3 minutes with the lid on. Season with salt and pepper to taste.
Prepare the sauce

  • Add the mushrooms to the pan and fry for 2 - 3 minutes while stirring.
  • Deglaze the vegetables with the Worcestershire sauce.
  • Add the BBQ spice rub and Sicilian-style herbs, then crumble in the beef stock cube (see pantry for amount) and fry for 30 seconds. 
  • Add the cream and stir well. Gently bring the sauce to a boil, then let it reduce for 3 - 5 minutes, until it has a creamy texture.
Fry the steak

  • Heat the rest of the olive oil in a small frying pan for the steak.
  • Fry the steak for 2 - 4 minutes on each side, or until cooked to your preference. Add some butter to taste.

Tip: fry the steak for 1 - 2 minutes per side for rare, 2 - 3 minutes per side for medium-rare and 4 - 5 minutes per side for well done.

Serve

  • Slice the steak, cutting against the grain.
  • Serve the vegetables and stroganoff sauce onto deep plates.
  • Serve the steak on top of the vegetables.
