- Take the steak out of the fridge and allow it to come up to room temperature.
- Chop the onion into half rings. Slice the courgette into crescents.
- Slice the mushrooms.
- Heat half of the olive oil in a deep frying pan with a lid over medium heat. Fry the onion and courgette for 2 - 3 minutes with the lid on. Season with salt and pepper to taste.
- Add the mushrooms to the pan and fry for 2 - 3 minutes while stirring.
- Deglaze the vegetables with the Worcestershire sauce.
- Add the BBQ spice rub and Sicilian-style herbs, then crumble in the beef stock cube (see pantry for amount) and fry for 30 seconds.
- Add the cream and stir well. Gently bring the sauce to a boil, then let it reduce for 3 - 5 minutes, until it has a creamy texture.
- Heat the rest of the olive oil in a small frying pan for the steak.
- Fry the steak for 2 - 4 minutes on each side, or until cooked to your preference. Add some butter to taste.
Tip: fry the steak for 1 - 2 minutes per side for rare, 2 - 3 minutes per side for medium-rare and 4 - 5 minutes per side for well done.
- Slice the steak, cutting against the grain.
- Serve the vegetables and stroganoff sauce onto deep plates.
- Serve the steak on top of the vegetables.
