Cooking Steps

Voorbereiden

  • Breng ruim water met een snuf zout aan de kook in een pan voor de pasta. Kook de pasta 10 - 12 minuten. Giet daarna af en laat uitstomen.
  • Bereid ondertussen de bouillon.
  • Halveer de spruiten. Snijd de courgette in de lengte in vieren en vervolgens in dunne plakken.
  • Verhit 1/2 el olijfolie per persoon in een hapjespan op middelhoog vuur en bak de spruiten 4 - 6 minuten. 
Topping maken

  • Verhit 3/4 el roomboter per persoon in een koekenpan op middelhoog vuur. Voeg de panko en citroentijmtakjes toe en bak al roerend 2 - 3 minuten, of tot de kruimels goudbruin kleuren (zie Tip). 
  • Haal uit de koekenpan, voeg toe aan een kleine kom en laat afkoelen.
  • Verwijder de citroentijmtakjes en meng de geraspte kaas door de panko.

Tip: Blijf bij de kruimels en schep regelmatig om zodat ze niet aanbranden.

Saus maken

  • Voeg de courgette toe aan de hapjespan met spruiten en bak nog 3 - 5 minuten. Blus af met de kookroom en bouillon.
  • Voeg de aglio e olio (let op: pittig! Gebruik naar smaak) toe en laat 4 - 6 minuten inkoken op middelhoog vuur, of tot de saus wat indikt. 
  • Was de citroen grondig. Rasp de schil van de citroen met een fijne rasp. Snijd de citroen in 6 partjes. 
  • Voeg de Grana Padano en 1 tl citroenrasp per persoon toe.
Serveren

  • Knijp 1 citroenpartje per persoon uit boven de hapjespan met de groenten. Voeg de pasta toe en meng goed. Breng op smaak met peper en zout.
  • Verdeel de pasta over de borden.
  • Heb je nog citroenrasp over? Meng deze naar smaak door de kaas-pankokruimels. Bestrooi de pasta met de kaaskruimels (zie Tip).
  • Serveer met de overige citroenpartjes. 

Gezondheidstip: Let jij op je calorie-inname? Serveer dan de helft van de kaaskruimels. Je kunt de overige kaaskruimels de volgende dag in een salade verwerken.
