Cooking Steps

Prepare

  • Preheat the oven to 200°C (see Tip).
  • Slice the onion into half rings and crush or mince the garlic.

Tip: you'll use the oven later to heat the tortillas, but you can also do this in a frying pan instead.

Fry the veggie döner

  • Heat a drizzle of olive oil in a frying pan over medium-high heat.
  • Fry the onion with the veggie döner and half of the Greek-style spices for 5 - 7 minutes until done.

Did you know... onion is a good source of vitamin C, which aids with iron absorption.

Chop the vegetables

  • Bake the tortillas in the oven for 2 - 4 minutes.
  • Slice the cucumber into crescents and dice the tomato.
  • In a salad bowl, combine the lettuce with the white wine vinegar and extra virgin olive oil, then season to taste with salt and pepper.
  • In a small bowl, combine the mayonnaise with the water for the sauce, the garlic and the rest of the Greek-style spices.
Serve

  • Top the tortillas with the lettuce, fried onion and veggie döner.
  • Add the cucumber and tomato, then crumble over the cheese. 
  • Drizzle with the garlic mayo, then roll up the tortillas and serve.
