Cooking Steps

Voorbereiden

  • Pers de knoflook of snijd fijn.
  • Ris de blaadjes van de dragon en bewaar apart.
  • Bereid de bouillon.
Bakken

  • Verhit 1 el roomboter per persoon in een koekenpan op middelhoog vuur.
  • Voeg de varkenshaas en de dragonblaadjes toe en bak de varkenshaas in 10 - 13 minuten rondom bruin. Haal de varkenshaas en dragon uit de pan en laat rusten onder aluminiumfolie. Laat het bakvet in de pan.
  • Rooster in dezelfde pan het mosterdzaad en de zonnebloempitten in 2 - 3 minuten lichtbruin.
Orzo bereiden

  • Verhit de olijfolie in een wok of hapjespan met deksel op middelhoog vuur en bak de knoflook en champignon-roerbakmix 2 minuten.
  • Voeg de orzo toe en roerbak 1 minuut op middelmatig vuur.
  • Schenk de bouillon over de orzo en kook de orzo, afgedekt, in 10 - 12 minuten op laag vuur droog. Schep regelmatig om.
  • Voeg de mosterd toe en eventueel extra water als de orzo te droog wordt. Breng op smaak met peper en zout.
Serveren

  • Snijd de varkenshaas in plakken.
  • Verdeel de orzo over diepe borden en leg de varkenshaas erbovenop.
  • Besprenkel met het mosterdzaad en de zonnebloempitten.
  • Garneer het gerecht de knapperige dragon.

Weetje: Champignons zijn rijk aan het mineraal fosfor dat samen met calcium zorgt voor stevige botten en tanden.
