- Cut the Romano pepper into strips and slice the onion into half-rings.
- Heat a drizzle of olive oil in a frying pan over medium-high heat.
- Fry the Romano pepper for 4 - 6 minutes, then remove from the pan and set aside.
- Heat a drizzle of olive oil in the same pan and fry the onion for 2 - 3 minutes.
- Add the chicken and half of the BBQ rub.*
- Fry for 7 - 8 minutes, then remove from the pan and set aside.
- Heat the tortillas in the same pan for 1 - 2 minutes per side.
- Meanwhile, grate the carrot and cut the lettuce into thin strips.
*Take care, this ingredient is spicy! Use as preferred.
- In a small bowl, combine the mayonnaise with the water for the sauce and the rest of the BBQ rub.
- Season to taste with salt and pepper.
- Quarter the lime.
- Serve all the elements separately at the table and allow everyone to build their own tacos (or if preferred, just plate everything directly).
