Smash burgers are made by pressing, or "smashing" ground meat into a thin patty with crispy, caramelized edges. In this recipe, you'll smash the meat into tortillas for a twist on classic tostadas!

- Slice the onion into half-rings.
- Dice the tomato.
- Roughly chop the lettuce.
- Divide the mince over the tortillas and press down, so as to make a smashburger on each one.
- Divide half of the onion over the tortillas and press it into the mince (see Tip).
- Heat a large clean frying pan over medium-high heat.
- Fry the tortillas with the mince facing downwards for 2 - 3 minutes.
- Flip and fry for 2 more minutes.
Tip: the rest of the onion will be served raw, but if preferred you can use all of it here instead.
- In a small bowl, combine the mayonnaise with the mustard, the ketchup and the pickles. Season to taste with salt and pepper.
- In a salad bowl, combine the lettuce with the red cabbage, the tomato, the rest of the onion and half of the 'special sauce'.
- Season to taste with salt and pepper.
- Top the tostadas with the cheese and allow to melt for 1 minute.
- Serve the tostadas on plates and top with some of the salad.
- Drizzle over the rest of the 'special sauce'.
- Serve the rest of the salad alongside.
