Cooking Steps

Fry the potatoes

  • Heat a drizzle of olive oil in a frying pan over medium-high heat.
  • Fry the baby potatoes for 9 minutes, covered, then remove the lid.
  • Season with salt and pepper, then add the thyme and fry for 5 more minutes.

Make the slaw

  • In a bowl, combine half of each of the sugar and the white wine vinegar. Add the slaw mix and season to taste with salt. Toss well to combine and then set aside, stirring occasionally. 
  • Core and slice the apple.
  • Slice the cucumber into crescents.
  • Finely chop the chives or use scissors if preferred.
Make the chive mayo

  • Heat a drizzle of olive oil in a frying pan over medium-high heat and fry the burger for 3 minutes per side until golden-brown. 
  • In a salad bowl, combine the ravigote sauce with the extra virgin olive oil, the mustard and the rest of the sugar. Season to taste with salt and pepper.
  • In a small bowl, combine the mayonnaise with the chives and the rest of the white wine vinegar. Season to taste with salt and pepper.
Serve

  • Shortly before serving, add the lettuce, slaw, pumpkin seeds, cucumber and apple to the salad bowl and toss well to combine with the dressing.
  • Serve the burger with the salad and baby potatoes.
  • Serve the chive mayo alongside.
