- Boil plenty of water in a pot or saucepan and cook the noodles for 4 - 5 minutes until al dente.
- Reserve 25ml cooking liquid per person, then drain and set aside.
- Meanwhile, heat a drizzle of sunflower oil in a wok or deep frying pan over medium-high heat. Stir-fry the vegetable mix for 8 - 10 minutes. Season to taste with salt and pepper.
- Pat the shrimp dry with kitchen paper.
- Heat a drizzle of sunflower oil in a frying pan over medium-high heat and fry the shrimp for 2 - 3 minutes. Season to taste with salt and pepper.
- Meanwhile, in a bowl combine the tomato ketchup with the teriyaki sauce and the soy sauce.
- Transfer the sauce, the noodles and the cooking liquid to the vegetables and fry for 1 minute.
- Roughly chop the Thai basil.
- Serve the noodles and vegetables on plates, then top with the shrimp.
- For parents: garnish with the Thai basil and the peanuts.
