Cooking Steps

Aardappelen koken
1

Verwarm de oven voor op 200 graden. Breng ruim water aan de kook in een pan met deksel voor de aardappelen. Was of schil de aardappelen en snijd in grove stukken. Kook de aardappelen, afgedekt, in 12 - 15 minuten gaar. Giet daarna af en laat zonder deksel uitstomen.

Sperziebonen bereiden

Verwijder de steelaanzet van de sperziebonen en snijd ze in 3 gelijke stukken. Zorg dat de sperziebonen net onder water staat in een andere pan met deksel, breng afgedekt aan de kook en laat 4 - 5 minuten zachtjes koken. Giet daarna af en spoel met koud water.

Weetje: Sperziebonen zijn rijk aan kalium, wat bijdraagt aan het behoud van een gezonde bloeddruk. Daarnaast zijn sperziebonen rijk aan ijzer en foliumzuur, wat zorgt voor een energiek gevoel.

Dressing maken

Pers ondertussen de knoflook of snijd fijn. Snipper de ui. Maak in een kom een dressing van het gemalen korianderzaad, de sojasaus, de sambal en de wittewijnazijn. Voeg de knoflook en de ui toe en breng op smaak met peper en zout.

Kip paneren

Pak 2 diepe borden. Voeg een snuf zout en 1 el olijfolie per persoon toe aan een van de borden. Meng in het tweede bord de sesamzaadjes en de Koreaanse kruiden met de panko. Haal de kip door de olijfolie en daarna door het sesam-pankomengsel.

Bakken

Verhit 1/2 el olijfolie per persoon in een koekenpan op middelhoog vuur. Bak de kip 2 minuten per kant, of tot de kip goudbruin is. Leg de kip op een bakplaat met bakpapier en bak 6 - 8 minuten in de oven. Maak de koekenpan schoon en verhit opnieuw 1/2 el olijfolie per persoon op middelhoog vuur. Voeg de sperziebonen en de helft van de dressing toe en roerbak 3 - 5 minuten. 

Serveren

Meng de overige dressing en de mayonaise door de aardappelen en breng op smaak met peper en zout. Verdeel de aardappelsalade en de sperziebonen over de borden. Serveer met de gepaneerde sesamkip.
