Breng ruim water aan de kook in een pan met deksel voor de aardappelen. Schil de aardappelen of was ze grondig en snijd in grove stukken. Snijd de courgette in de lengte in kwarten en vervolgens in stukken van maximaal 1 cm dik. Snijd de sjalot in halve ringen van maximaal 1 cm dik. Dep de kabeljauwfilet droog met keukenpapier. Besmeer beide kanten met de pesto en breng op smaak met peper en zout.

Kook de aardappelen, afgedekt, in 12 - 15 minuten gaar.Verhit 1/2 el roomboter per persoon in een hapjespan met deksel op middelhoog vuur. Bak de sjalot en courgette 1 - 2 minuten. Voeg per persoon 1 tl witte balsamicoazijn toe, breng op smaak met peper en zout en verlaag het vuur. Dek de hapjespan af en stoof de groenten 10 - 12 minuten.

Klop 1/2 ei per persoon los in een diep bord.Doe de panko in een ander diep bord.Wentel de kabeljauw eerst door het ei en daarna door de panko tot de hele vis bedekt is met een laagje panko.Verhit 1 el zonnebloemolie per persoon in een koekenpan en bak de kabeljauw 2 - 3 minuten per kant.

Tip: Wist je dat kabeljauw rijk is aan jodium? Een belangrijk mineraal voor de schildklier, stofwisseling en groei van kinderen.

Stamp de aardappelen tot een puree. Meng er per persoon: 1/2 el roomboter, 1 tl mosterd, een half ei en een scheutje melk door. Breng op smaak met peper en zout en verhit eventueel nog kort tot het ei gestold is. Verdeel de aardappelpuree over de borden. Leg op elk bord een kabeljauwfilet en schep de courgette en sjalot erbij.
