Butter lettuce contains as many as 2 to 4 times more leaves than other common varieties of lettuce. Furthermore, the leaves are about the same size and are tender and subtle in flavour.

Preheat the oven to 220°C. Wash or peel the potatoes and cut into fries of no more than 1cm thickness. Pat the fries dry with kitchen paper, then transfer to a bowl and drizzle with olive oil. Season with salt and pepper, then toss well to coat. Transfer to a parchment-lined baking sheet and bake in the oven for 30 - 40 minutes, tossing halfway.
Slice the onion into half rings. Heat a light drizzle of olive oil in a frying pan over medium-high heat. Fry the onion for 2 - 3 minutes, then stir in the chicken thigh strips and fry for 7 minutes until done.
In the meantime, crush or mince the garlic and finely chop the parsley. Transfer both to a small bowl, then add the yogurt and mix well to combine (see Tip). Season to taste with salt and pepper.
Tip: if you received a large garlic clove or you don't like the taste of raw garlic, use less and then taste the sauce before adding more.
Meanwhile, cut the lettuce into thin strips and dice the tomato. Transfer both to a salad bowl and add the white balsamic vinegar, then mix well to combine. Season to taste with salt and pepper.
Use individual oven dishes for each portion or use a large one to share. Transfer the salad to the oven dish (see Tip). Top with the fries and the chicken. Scatter over the grated cheese, then bake in the oven for 5 minutes so as to allow the cheese to melt.
Tip: if preferred, you can skip this and serve the salad cold instead.
Serve the kapsalon with the garlic sauce alongside.
