You can prepare some elements in advance. See the 'mise en place' information on the front of the recipe card.
- Take the cream cheese out of the fridge and allow it to reach room temperature.
- Roughly chop the speculaas and set aside 0.5 tbsp per person to use later as garnish. Transfer the rest to a bowl.
- Melt the butter in a small saucepan over medium heat.
- Transfer the melted butter to the speculaas and mix well to combine.
- Divide half of the speculaas mixture over serving glasses and then set these aside in the fridge. Set aside the rest of the speculaas to use later.
- Zest and juice the orange. Cut open the passion fruit and scoop out the flesh.
- In a saucepan over medium-high heat, combine the orange juice with the passion fruit and half of the sugar.
- Allow to simmer and reduce for 4 - 5 minutes.
- In a large bowl, use a handheld mixer to beat the cream with the rest of the sugar.
- Use a spatula to fold in the cream cheese and 0.5 tsp orange zest per person.
- Roughly chop the pistachios.
- Divide half of the cream cheese mixture over the glasses.
- Top first with the rest of the speculaas mixture and then with the rest of the cream.
- Finish with the passion fruit sauce.
- Garnish with the pistachios and the reserved speculaas.
