Cooking Steps

Krieltjes koken

Was en halveer de krieltjes. Snijd de eventuele grote krieltjes in kwarten. Kook de krieltjes, afgedekt, in een pan met deksel in 10 – 12 minuten gaar. Giet daarna af en laat zonder deksel uitstomen.

Kook ruim water in een andere pan met deksel voor de sperziebonen. Verwijder de steelaanzet van de sperziebonen en snijd de sperziebonen in 3 gelijke stukken. Kook de sperziebonen 8 – 10 minuten, giet af en spoel met koud water.

Champignonburger bakken

Verhit ondertussen 1 el olijfolie per persoon in een koekenpan op middelhoog vuur. Bak de champignonburger 4 – 6 minuten per kant.

Krieltjes bakken

Verhit de roomboter in een andere koekenpan op middelhoog vuur. Bak de krieltjes 2 – 3 minuten. Voeg de geraspte kaas toe, meng goed met de krieltjes en bak nog 1 – 2 minuten.

Salade maken

Maak in een saladekom een dressing van de extra vierge olijfolie, witte balsamicoazijn en mosterd. Ris de blaadjes munt van de takjes en snijd ze grof. Meng de rucola, sperziebonen en munt met de dressing. Meng de mayonaise met de rest van de mosterd en de honing.

Verdeel de kaaskrieltjes en salade over de borden. Leg de champignonburger ernaast en verdeel de mayonaise over de burgers.
