Snijd de rode puntpaprika in halve repen. Snipper de rode ui grof. Verhit 1/2 el olijfolie per persoon in een koekenpan met deksel op middelhoog vuur. Voeg de rode puntpaprika en rode ui 1 toe aan de koekenpan en bak 1 minuut. Blus af met 1 el zwarte balsamicoazijn en bak de rode puntpaprika en rode ui ,afgedekt, 3 - 4 minuten.

Haal de rode puntpaprika en de rode ui uit de pan en zet apart. Snijd het bruine tarwebroodje in blokjes van ongeveer 1 bij 1 cm. Snijd het spek in kleine stukjes. Verhit 1/2 el olijfolie in dezelfde koekenpan met deksel. Voeg het bruine tarwebroodje en het spek toe en roerbak 3 - 5 minuten, of tot krokant en goudbruin.

Maak ondertussen een dressing van de pesto en 1/2 el extra vierge olijfolie per persoon in een saladekom. Halveer de cherrytomaten en snijd de botersla fijn. Roer de cherrytomaten en botersla door de saladekom. Meng vlak voor serveren de paprika en rode ui door de salade.

Verdeel de salade over de borden. Plaats de burrata in het midden en bestrooi met zwarte peper. Besprenkel met de crema di balsamico. Garneer het gerecht met het spek, de croutons en de basilicumblaadjes.
