Preheat the oven to 210°C. Peel or thoroughly wash the potatoes and then cut into fries of no more than 1cm thickness. Transfer to a bowl and drizzle with the olive oil. Season the fries with salt and pepper, then toss well to coat. Transfer to a parchment-lined baking sheet and bake in the oven for 30 - 40 minutes or until golden-brown, tossing halfway.
Core the apple, then grate a quarter of it and set this aside. Thinly slice the rest of the apple.
Did you know... apple contains pectin, a fermentable fibre which boosts gut health, cholesterol and immunity.
Halve the cucumber lengthways and scoop out the seeds, then thinly slice it. Cut the onion into rings. Transfer the mesclun to a salad bowl, then drizzle with extra virgin olive oil and white balsamic vinegar as preferred. Season to taste with salt and pepper, then toss well to combine.
In a bowl, combine the mince with the grated apple and the panko breadcrumbs. Season with salt and pepper, then shape the mixture into burger patties.
Heat a clean frying pan over medium-high heat (the mince is already quite fatty, so don't add any oil or butter unless it seems like the burger will start sticking to the pan). Fry the burger with the onion for 7 minutes, then flip and fry for 4 more minutes. Cover with the lid and fry for 3 more minutes until done.
Cut open the brioche bun and serve all the other elements separately alongside; the apple slices, mesclun salad, cucumber, mayonnaise and fried onion. Allow everyone build their own burger as preferred. Serve the fries alongside.
