Cooking Steps

Prepare

  • Preheat the oven to 200°C. Boil plenty of water in a pot or saucepan for the broccoli.
  • Pat the salmon dry with kitchen paper.
  • In a bowl, combine the hoisin sauce with the sunflower oil. Add the salmon and coat it with the hoisin sauce. 
  • Slice the tomato. Cut the head of the broccoli into small florets.
Bake the salmon

  • Prepare a 30cm square of aluminium foil for each person.
  • Transfer the sliced tomato to the foil, then top with the hoisin salmon.
  • Season with salt and pepper, then tightly seal the foil.
  • Bake the salmon in the oven for 12 - 15 minutes.
Cook the noodles

  • Boil the broccoli for 1 - 2 minutes, then add the noodles and cook for another 1 - 2 minutes until al dente. Drain and set aside.
  • Cut the lime into six wedges.
  • In a small bowl, combine the ginger paste with the soy sauce, East Asian-style sauce and honey. Add the juice of one lime wedge per person and mix well.
  • Add the sauce to the noodles and broccoli, then toss well to combine and fry for 1 minute over medium-high heat.
Serve

  • Serve the noodles and broccoli on plates.
  • Top with the tomato and baked salmon. Take care when opening the foil, as it will be very hot inside.
