Préchauffez le four à 200degrés. Taillez l’oignon en demi-rondelles. Écrasez ou émincez l’ail. Coupez le halloumi en deux dans le sens de la longueur, puis en bâtonnets de la taille de frites. Dans le bol, mélangez le halloumi à l’ail, une pincée de poivre ainsi qu'à 1/2cs d’huile d’olive et 1,5cc d’origan par personne.

Faites chauffer la poêle à sec à feu moyen-vif. Faites-y cuire les oignons 6 à 8minutes. Ajoutez ensuite 1/2cs de beurre et 1/2cs de vinaigre balsamique noir par personne ainsi que le chutney de canneberges. Mélangez bien et poursuivez la cuisson du chutney encore 2 à 3minutes.

Faites chauffer l'autre poêle (antiadhésive) à feu moyen-vif, à sec.Faites dorer le halloumi 6 à 8minutes de tous les côtés. Pendant ce temps, emballez les tortillas dans de l’aluminium et enfournez-les 2 à 3minutes. Coupez le concombre en deux dans le sens de la longueur, puis en bâtonnets. Coupez les tomates en dés.

Dans le saladier, préparez la vinaigrette avec 1/2cs d’huile d’olive vierge extra et 1/2cs de vinaigre de vin blanc par personne. Salez et poivrez. Ajoutez le mélange de salades. Garnissez les tortillas de salade, de concombre, de tomate et des frites d'halloumi. Garnissez avec le chutney d’oignons et de canneberges. Mélangez le reste de la tomate et du concombre à la salade et présentez-la en accompagnement.
