Cooking Steps

Orzo maken

  • Bereid de bouillon. Snipper de sjalot. 
  • Verhit de olijfolie in een hapjespan met deksel op laag vuur en fruit de sjalot 2 minuten.
  • Voeg de orzo toe en bak 1 minuut op middelhoog vuur. 
  • Schenk de bouillon over de orzo en kook de orzo, afgedekt, in 10 - 12 minuten op laag vuur droog. Schep regelmatig om. Voeg eventueel extra water toe als de orzo te droog wordt.
  • Voeg in de laatste 2 minuten de spinazie, eventueel in delen, toe aan de hapjespan.
Varkenshaas bakken

  • Verhit ondertussen 1/2 el roomboter per persoon in een koekenpan op middelhoog vuur en bak de varkenshaas in 10 - 13 minuten rondom bruin. Breng op smaak met peper en zout.
  • Haal uit de pan en laat rusten onder aluminiumfolie.
  • Pers de knoflook of snijd fijn.
  • Snijd het witlof in kwarten.
Witlof bakken

  • Verhit 1 el roomboter per persoon in dezelfde koekenpan op middelhoog vuur en fruit de knoflook 2 minuten.
  • Voeg het witlof, de honing, de mosterd en de aangegeven hoeveelheid water toe.
  • Bak het witlof 3 minuten. Voeg de pecannoten toe en breng op smaak met peper en zout.
Serveren

  • Snijd de varkenshaas in plakken.
  • Serveer de orzo in diepe borden.
  • Verdeel het witlof en de varkenshaas erbovenop.
  • Besprenkel met de pecanbotersaus.

Weetje: Wist je dat witlof haar kleur dankt aan het feit dat de bladeren het zonlicht niet zien? Hierdoor produceert de plant geen chlorofyl of bladgroen, wat witlof een groene kleur zou geven.
