Cooking Steps

Make the tomato sauce

  • Preheat the oven to 200°C.
  • Crush or mince the garlic and slice the onion into half rings.
  • Dice the bell pepper.
  • Heat a light drizzle of olive oil in a frying pan over medium-high heat. Fry the garlic and half of the onion with the Mexican-style spices* and the passata for 4 - 5 minutes (see Tip). Season to taste with salt and pepper. 

*Take care, this ingredient is spicy! Use as preferred.

Tip: if you don't like raw onion, fry all of it here.

Bake the pizza

  • Roll out the pizza dough onto a parchment-lined baking sheet and spread with the tomato sauce.
  • Top with the grated cheese and the bell pepper (see Tip).
  • Bake in the oven for 13 - 15 minutes.

Tip: the onion will be served raw, but if preferred, you can use it as a pizza topping here instead.

Prepare the toppings

  • Finely chop the coriander. Dice the tomato and crumble the Greek-style cheese. Cut the lime into six wedges.
  • In a small bowl, combine the tomato with the coriander and the rest of the onion.
  • Add the extra virgin olive oil and the juice of one lime wedge per person, mix well and season to taste with salt and pepper.

  • Take the pizza out of the oven and top with the avocado dip and Greek-style cheese (see Tip). 
  • Serve the pizza on plates and garnish with the tomato salsa.
  • Serve any remaining lime wedges along side. 

Health Tip: this meal is high in both salt and calories. If you're watching your intake of these, serve just half of the Greek-style cheese and keep the rest to use another time.
