Drie-in-de-pan zijn drie kleine pannenkoekjes die oorspronkelijk gemaakt werden van oliebollenbeslag. Het maken van dat beslag duurt vrij lang, daarom hebben we een snelle variant met dik beslag en rozijnen bedacht. Erbij maak je een simpele roze saus van jam en zure room.

Beslag maken

Roer in een beslagkom het ei los met een garde. Schenk al roerend de melk erbij. Voeg vervolgens beetje bij beetje de American pancake mix toe en roer de blauwe rozijnen erdoor. De mix hoort dik te zijn.

Pannenkoekjes bakken

Verhit een deel van de roomboter in een koekenpan op middelhoog vuur. Schenk 3 kleine pannenkoekjes in de pan. Draai de drie-in-de-pan om wanneer er gaatjes in het beslag ontstaan. Herhaal dit nog 3 keer met de rest van het beslag en de overige roomboter. Je kunt per persoon ongeveer 6 kleine pannenkoekjes uit het beslag halen.

Saus maken

Meng ondertussen in een kom de zure room met de frambozenjam tot een egale roze saus.

Serveren

Verdeel 3 pannenkoekjes per persoon over de borden. Schep de roze saus op de pannenkoekjes of serveer deze er apart naast. Bewaar de overige pannenkoekjes in de koelkast en eet ze bijvoorbeeld als ontbijt.
