Cooking Steps

Prepare

  • Finely chop the onion and set a little bit aside for step 3 (see Tip).
  • Dice the bell pepper.

Tip: you'll be using the rest of the onion raw in the tomato salsa, but if you don't like raw onion, go ahead and use it all in step 2.

Prepare the minced beef

  • Heat a drizzle of olive oil in a frying pan over medium-high heat.
  • Add the onion, bell pepper, BBQ spice rub and Mexican-style spices and fry for 2 - 3 minutes.
  • Add the tomato paste and minced beef, then fry for 4 - 6 minutes, or until the meat is cooked through.
  • Add the grated cheese in the last minute, stir everything together and let the cheese melt.
Make the tomato salsa

  • Finely dice the tomato and cut the lime into wedges.
  • In a small bowl, mix the tomato with the rest of the onion and the juice of 1 lime wedge each. Season with salt and pepper to taste.
  • Pull 4 lettuce leaves per person off the little gem (see Tip).

Tip: you can also put two leaves together to make the lettuce tacos bigger: then you'll need 8 leaves per person.

Serve

  • Transfer the little gem leaves to plates and fill them with the minced beef.
  • Dollop the guacamole, sour cream and tomato salsa over the lettuce tacos.
  • Serve with a lime wedge.
