- Boil plenty of water in a pot or saucepan and cook the pasta for 10 - 12 minutes, then drain and set aside.
- Chop the onion and crush or mince the garlic.
- Dice the tomato.
- Drain the tuna, being sure to reserve the oil in a small bowl.
- Heat a generous drizzle of the reserved oil in a deep frying pan over medium-high heat.
- Fry the garlic and onion for 1 - 2 minutes.
- Add the tomato, Sicilian-style herbs and balsamic vinegar, then fry for 5 - 7 minutes.
- Heat the rest of the oil in a frying pan over medium-high heat.
- When the oil is nice and hot, fry the feta for 2 minutes per side.
- To the vegetables, add the pesto, tuna, arugula and pasta. Mix well to combine.
- Season to taste with salt and pepper.
- Serve the pasta on deep plates.
- Top with the feta and garnish with the olives.
