Cooking Steps

Prepare

  • Boil plenty of water in a pot or saucepan and cook the pasta for 10 - 12 minutes, then drain and set aside.
  • Chop the onion and crush or mince the garlic. 
  • Dice the tomato.
  • Drain the tuna, being sure to reserve the oil in a small bowl.
Fry the aromatics

  • Heat a generous drizzle of the reserved oil in a deep frying pan over medium-high heat.
  • Fry the garlic and onion for 1 - 2 minutes.
  • Add the tomato, Sicilian-style herbs and balsamic vinegar, then fry for 5 - 7 minutes.
Fry the feta

  • Heat the rest of the oil in a frying pan over medium-high heat.
  • When the oil is nice and hot, fry the feta for 2 minutes per side.
  • To the vegetables, add the pesto, tuna, arugula and pasta. Mix well to combine.
  • Season to taste with salt and pepper.
Serve

  • Serve the pasta on deep plates.
  • Top with the feta and garnish with the olives.
