Cooking Steps

Garnalen marineren

  • Breng ruim water aan de kook in een pan.
  • Pers de knoflook of snijd fijn. Snijd de limoen in 4 partjes.
  • Dep de garnalen droog met keukenpapier.
  • Meng in een kom de garnalen met per persoon: 1 el zonnebloemolie en het sap van 1 limoenpartje per persoon. Breng op smaak met peper en zout. Zet opzij.
Groenten bakken

  • Kook de rijstnoedels in 6 - 7 minuten beetgaar. Giet daarna af en spoel onder koud water. Voeg de noedels weer toe aan de pan en meng met 1/2 el zonnebloemolie per persoon. 
  • Snijd de ui in halve ringen. Snijd de puntpaprika in dunne repen.
  • Verhit 1/2 el zonnebloemolie in een wok met deksel op hoog vuur. Bak de ui, paprika en broccolini 4 - 6 minuten.
Scampi's bakken

  • Blus af met een scheutje water. Dek de pan af en bak, afgedekt, 3 - 4 minuten op middelhoog vuur. Breng op smaak met peper en zout. Haal uit de pan en bewaar apart.
  • Verhit een koekenpan zonder olie op middelhoog vuur en bak de garnalen met marinade in 3 minuten gaar. Schep halverwege om.
  • Meng in een kleine kom de sojasaus, zwarte-bonenpasta, ketjap, wittewijnazijn, suiker en sambal.
Serveren

  • Verhit 1/2 el zonnebloemolie per persoon in dezelfde wok op hoog vuur. Voeg, wanneer de olie goed heet is, de noedels en saus toe en meng goed. Bak 1 - 2 minuten, zonder te veel te voeren.
  • Snijd het Thaise basilicum fijn.
  • Voeg de groenten toe aan de noedels en meng goed. 
  • Verdeel de noedels over de borden. Leg de knoflookgarnalen erop.
  • Garneer met het Thaise basilicum en de pinda's. Serveer met de eventuele overige limoenpartjes.
