Voorbereiden

Verwarm de oven voor op 200 graden. Snijd de ui in halve ringen. Snijd de gele paprika en de puntpaprika in kleine reepjes.

Weetje: Wist je dat (punt)paprika naast vitamine C ook rijk is aan vitamine E? Vitamine E is een antioxidant dat ook in zonnebloemolie, volkoren producten, noten, zaden en groene groenten zit.

Groenten bakken

Verhit 1/2 el olijfolie per persoon in een hapjespan op middelhoog vuur en bak de ui en de gele paprika 4 - 5 minuten. Schep regelmatig om en breng op smaak met peper en zout.

Saus maken

Voeg de passata en per persoon: 1 tl Italiaanse kruiden, 1 tl zwarte balsamicoazijn en 2 el water toe aan de hapjespan. Breng op smaak met peper en zout. Laat 5 - 7 minuten inkoken op middelmatig vuur, of tot er een dikke saus ontstaat. Roer regelmatig door. Rol ondertussen het pizzadeeg uit op een bakplaat met bakpapier. Snijd het deeg in gelijke stukken zodat je 4 pizza pockets per persoon hebt.

Smeer wat tomatensaus op de helft van de deegstukken, maar houd de rand vrij. Leg er enkele kruidenkaasblokjes op (zie Tip). Vouw de lege helft van het deeg over de belegde helft. Duw de rand goed dicht met een vork. Herhaal dit voor elke pocket. Bak 15 - 20 minuten goudbruin in de oven.

Tip: Let jij op je zoutinname? Gebruik dan slechts de helft van de kruidenkaasblokjes. De overige kaas is lekker in een lunchsalade de volgende dag, of om je belegde boterham mee te garneren.

Meng in een saladekom per persoon: 1 tl extra vierge olijfolie met 1/2 tl balsamicoazijn, peper en zout. Voeg de sla en puntpaprika toe en meng goed door.

Serveren

Haal de pizza pockets uit de oven en verdeel over de borden. Serveer met de salade.
