Cooking Steps

Aardappelen bakken

Schil of was de aardappelen (nicola) grondig en snijd in parten (zie tip). Verhit de roomboter in een hapjespan met deksel en bak de aardappelen met de rozemarijn 25 – 30 minuten, afgedekt, op middelhoog vuur. Haal na 20 minuten de deksel van de pan. Schep regelmatig om en breng op smaak met peper en zout.

Kipfilet bakken

Verhit ondertussen de helft van de olijfolie in een koekenpan met deksel en bak de kipfilet op hoog vuur rondom bruin. Zet het vuur middellaag, dek de pan af en bak 6 – 9 minuten, of tot de kipfilet gaar is. Keer regelmatig om.

Andijvie roerbakken

Verhit ondertussen de overige olijfolie in een wok of andere hapjespan met deksel en roerbak de andijvie 3 minuten op middelhoog vuur (zie tip).

Roomkaas toevoegen

Zet het vuur laag en voeg de kruidenroomkaas, de honing en de mosterd toe. Breng op smaak met peper en zout en laat, afgedekt, 1 minuut zachtjes koken.

Tomaten mengen

Snijd ondertussen de tomaat in blokjes en meng in een kleine saladekom met de witte balsamicoazijn en extra vierge olijfolie naar smaak. Breng op smaak met peper en zout.

Serveren

Verdeel de romige andijvie, de gebakken aardappelen en de kipfilet over de borden. Serveer met de tomatensalade.
